ITEM NUMBER SEVEN…

SPAGHETTI MEAT BALLS IN TOMATO CONCASSE
Serving 3-4 people

Spaghetti is Italian pasta. It is usually served for luncheon or served separate course and could also be used as garnishes.

Recipe
250g Spaghetti
50g Grated Cheese
50g Butter
Salt to taste

Concassee
500g Onions (chopped)
500g Tomatoes (chopped)
200g Butter
Mill pepper
Ginger, Garlic (crushed)
Salt to taste

Meat Balls
250g mince meat
3-4 Tbspn Vegetable Oil
Salt to taste

METHOD
 Plunge Spaghetti into a saucepan containing boiling salted water
 Allow to boil gently
 Stir occasionally with a wooden spoon
 Cook for approximately 12- 15mins
 Drain well in a colander
 Return to a clean , dry pan
 Mix in the butter to prevent sticking
 Correct the seasoning

TOMATO CONCASSEE
Cook the finely chopped onion in the butter without colour, add the chopped tomatoes, ginger, garlic. Season with salt and mill pepper.



MEAT BALLS:
 Mix all the ingredients together and mould into 7-9 pieces
 Place on a greased baking sheet
 Cover with foil
 Allow to cook in a moderate oven
 Simmer the meat balls in Tomato Concassee
 Pour unto a hollowware
 Spread spaghetti on top
 Serve in earthenware dish on a silver flat with grated cheese separately.
